HOMEMADE CHICKEN SAUSAGE WITH CARRAGEENAN RECIPE
Ingredients:
- 250 grams of chicken fillet (thigh)
2. ½ tsp carrageenan powder
3. 2 tbsp tapioca flour
4. 1 tsp salt
5. 1½ tsp sugar
6. 1 tsp MSG
7. ¼ tsp ground white pepper
8. 1 tsp onion powder
9. 1 tsp coriander powder
10. 1 tsp garlic powder
11. 50 grams of ice cubes
12. 100 ml cold mineral water
13. 10 ml cooking oil
14. Sausage casing (optional)
How to make it?
- Put the chicken fillet, carrageenan powder, tapioca flour, salt, sugar, MSG, white pepper powder, onion powder, coriander powder, garlic powder, ice cubes, mineral water, and cooking oil into the meat grinder (chopper).
- Grind the meat and all ingredients until smooth and form the sausage mixture (the fineness of the sausage mixture is adjusted to your liking).
- Inserting the sausage mixture in the sausage casing (optional) or mold the mixture in the sausage mold.
- If using sausage casing, the sausage casing is tied with a thread of a certain length and pierced with a needle before steaming (avoiding the sausages breaking during steaming).
- Steam in a steamer for ±10 minutes until cooked.
- Cooked sausages can be served immediately, fried, or stored in the freezer.
